1. Peel and wash the potatoes, cut into small pieces, and set aside.

2. Heat oil in a pot, add the potato pieces.

3. Fry the potatoes until slightly golden, then add soy sauce and enough water to cover the potatoes.

4. Slow cook the potatoes with added water.

5. Once the liquid has reduced and the potatoes are soft, mash them with a spoon until they form a paste.
