1. Prepare all the ingredients

2. Rinse the chicken thighs and set aside

3. Puncture each chicken thigh with a fork to make countless small holes.(This makes it easier for seasoning to penetrate, preventing the skin from shrinking when fried)

4. Cut the ginger into strips and chop the garlic cloves.

5. Marinate the punctured chicken thighs with prepared cooking wine, dark soy sauce, salt, ginger strips, and garlic cloves; mix well by hand for forty minutes.

6. Add the crispy fried chicken seasoning packet, evenly coat the marinated chicken thighs with it.

7. Heat 500ml of edible oil to seven-tenths hot, turn off the heat, place the coated chicken thighs into the pot, and fry on low heat for nine minutes before removing and draining excess oil.

8. Double-fry, quickly rinse the fried chicken with water after frying once, re-coat them with seasoning powder and fry again until golden yellow before removing and draining excess oil.

9. Serve and enjoy, pair with some fruit for an even better experience.
