Select materials; it's not necessary to use thigh meat, choose the part you like. Personally, I find the thigh and nearby meat more tender. Prepare two thighs, wash them thoroughly, and remove small feathers. Boil water in a pot, add chicken thighs.

Do not use high heat; gentle boiling is best. Wash green onions.

Cut white parts of the green onion into long pieces, chop the greens and set aside in a bowl. Clean Sichuan pepper and dry it. Insert a toothpick into the thigh; when no blood stains remain on the stick, the chicken is cooked.

Remove the cooked thighs from the pot, place them in a small iron plate, and let them cool in water.If possible, use an airtight bag to cool with ice water. Ensure the chicken cools before slicing; otherwise, it will fall apart. Once cooled, slice the chicken thighs into portions and arrange on a plate. Heat oil in a pan, add white parts of green onion, fry over low heat until golden brown and shriveled, then remove and discard. Add Sichuan pepper to the oil left in the pan; stir-fry to release its fragrance.

Mix salt into chopped green onions, mix well.

Strain the oil through a sieve, pour it over the mixture of green onions and salt.

Add one teaspoon of light soy sauce, stir with a fork until well mixed.

Immediately drizzle this dressing over the chicken pieces. If needed, add more liquid from cooking to increase oil volume. Serve after drizzling; it's very satisfying for meals.
