Pearl Dripping Fish BassIngredients Introduction

Steps for Making Dripping Pearl Bass:
Prepare one bass, remove the scales, make a cut from the belly to clean the insides. Then rinse with water.

2. Cut off the headand tail of the fish, and slice the body into pieces.

3. Chop the green onion into small segments, mince the garlic and ginger.

4. Dice the mango.

5. Slice the chili pepper.

6. Prepare a small bowl and mix in tomato juice, dark soy sauce, salt, starch slurry, water, white pepper powder, sugar to form the seasoning sauce.

7. Coat the fish pieces with starch evenly.

8. Boil water in a pot and add the wine, then cook the head and tail of the fish until done; remove after cooking.

9. Cook the sliced fish pieces in the pot.

10. Arrange the cooked heads, tails, and slices on the plate.

11. Heat the pan over high heat, pour in the oil when it's six parts hot, then add the scallions, ginger, and garlic to stir-fry until fragrant.

12. Pour in the prepared seasoning sauce.

13. Cook until the sauce thickens and add green pepper; stir a few times and the sauce is ready.

14. Pour the cooked sauce over the fish.

15. Add the diced mango, serve immediately.

Tips:
Do not let the water in the pan boil too vigorously when marinating the fish slices to avoid breaking them. Stir continuously while cooking the sauce to prevent it from sticking to the bottom of the pot.
