Winter pumpkin and roast pork preparation steps:
Prepare the ingredients

Peel, wash, and slice the winter pumpkin; cut chilies diagonally, flatten garlic cloves and peel them off, slice ginger, and chop scallions finely

Boil the rib-eye pork for a few minutes in hot water, then rinse with warm water and slice it

Pour oil into a pot and heat. Add the rib-eye pork to fry out the fat

After frying, pour some of the oil off into a bowl

Fry ginger and garlic cloves

Add winter pumpkins and stir-fry

Add soy sauce, old soy sauce, vinegar, salt, MSG, Sichuan peppercorn powder

Pour in enough water Cook over fire Do not fill the pot with too much water as the winter pumpkin is already very watery and will cook easily

When the water nearly boils dry, add chilies and sesame oil. Stir-fry until thickened

Serve in a plate and sprinkle chopped scallions on top
