Steps:1. Clean the Pinctada shells, add salt, ginger, and Shaoxing wine in water to cook until they open. 2. Remove and wash with clean water one by one to prevent sand.
3. Beat eggs into a bowl, add an equal amount of water, salt, then beat manually and strain before adding Pinctada shells.

4. Cover with cling film and steam for 12 to 15 minutes until set.

5. Add scallion garnish and sprinkle with vinegar and sesame oil.

Tip:

Pinctada shells must be thoroughly cleaned, no sand allowed.

When steaming eggs, they should be set but not overcooked.
Wash the clams thoroughly to remove any sand. Steam the egg until it sets, do not overcook it.
