Steps to Make Dry-Braised Golden Pomfret:
1. Rinse the cleaned golden pomfret thoroughly with water.

2. Cut several slashes on both sides of the fish for better flavor penetration.

3. Rub salt evenly on the fish, then add a little Shaoxing wine and let it marinate for about 20 minutes.

4. Dice ginger and red pepper, cut another part of the red pepper and spring onion into strips.

5. Absorb the water around the marinated golden pomfret with paper towels to prevent oil splatters while frying.

6. Heat oil in a pan, add diced ginger and small red pepper pieces, stir-fry until fragrant then remove and discard them.

7. Fry over medium-low heat, cook both sides of the fish until golden brown, gently shaking the pan when needed to ensure even cooking.

8. Once the fish is fried on both sides, add some Steamed Fish Sauce, then remove from heat.

9. Garnish with spring onion and red pepper strips before serving; pour remaining oil over the top for extra flavor.

Tips:
Marinate fish with Shaoxing wine and salt for about 15 minutes beforehand.
Avoid flipping the fish hastily, which can easily tear its skin. Gently shake the pan to check if it's time to flip; the fish will move when ready.
