How to make Braised Kelp Tangles with Tofu:
Prepare all ingredients.

Cut tofu into small pieces; soak kelp tangles, clean them thoroughly.

Boil water in a pot and add tofu for 3 minutes, then remove and drain.

Similarly boil kelp tangles for 3 minutes, then remove and drain.

In a clean pot, add oil and heat on low flame; stir-fry ginger and garlic.

Add drained kelp tangles, tofu, and red chili pepper. Add appropriate amount of water to cover the ingredients, adjust to medium-low heat, season with salt, chicken essence, soy sauce, aged soy sauce, cooking wine, vinegar, and sugar. Cover the pot and continue simmering until the sauce reduces.

Sprinkle chopped onion over the top before serving.
