Mooncakes Steps to Make: 1. Weigh all ingredients and prepare them.
2. Mix the cane syrup with alkali water thoroughly.

3. Add oil and mix well; this process feels like watching a grandpa making sugar figures (this is how I imagine it).

4. Add low-gluten flour and stir.

5. Knead into a dough, wrap in cling film, and refrigerate for one hour.

6. Make 25-gram small balls from the dough; if using 100 grams of filling, use 45 grams of dough and 55 grams of filling.

7. Open the dough skin and place the filling inside.

8. Close with your fingers and seal tightly.

9. Dust lightly with dry flour.

10. Coat the balls with dry flour, press them into the mooncake mold, and remove them for shaping.

Oven

11.Preheat oven to 180 degrees Celsius for 5 minutes (I forgot to buy baking paper; making do). 12. Place the mooncakes in the oven and bake for 5 minutes, then brush with water and bake for another 10 minutes.

Take out and brush with egg wash.

13. Bake until golden brown, then take out to cool.

Tips:
Be careful when brushing with egg wash to avoid burning. Don't use too much egg wash; mine was a bit too much and the design disappeared. If the fillings are from the freezer, dry them first before using.
