Steps to make oyster sauce eggplant:
1. Slice the eggplant into long dice, and prepare minced ginger and garlic.

2. Mix dark soy sauce, water, oyster sauce with a little starch in a bowl. Blend it into a sauce.

3. Quickly stir-fry the green and red peppers until they are 60% cooked, then set them aside.
