Home-style Steamed Fish Fillets with Dill Oil

Fish is a common dish in family cooking, suitable for various groups. I quite enjoy eating fish.Mother has high blood pressure, so she can only eat less of other meats or none at all.Therefore, I often make different kinds of fish dishes at home. Today, I will introduce the stir-fried garlic butter codfish.Ingredients: one piece of fresh cod (preferably frozen), two large green onions, one egg,

ginger,garlic, Sichuan pepper,star anise, cinnamon, oyster sauce,soy sauce, salt, cornstarch, chicken powder, sugar, cooking wine.Method: 1. Clean the cod, slice it into pieces, and season with a little bit of salt, ginger slices, garlic slices, Sichuan pepper seeds, cooking wine, and green onion segments. Marinate for about ten minutes. 2. Beat one egg. Heat oil in a wok to five-tenths hot, then coat the cod pieces with the beaten egg.3. Fry or pan-fry the coated cod until golden brown. 4. Remove the fried cod from the pot and set aside.

5. Prepare the seasonings, slice the green onions.
6. Heat oil in another wok, add sliced green onions, star anise, and cinnamon, then fry on low heat until fragrant.
7. Fry until the green onion segments turn golden, remove the whole green onion segments.
8. In the same pot, add Sichuan pepper seeds and stir-fry until fragrant, then add oyster sauce, soy sauce, a little sugar, and about half a bowl of water.

9. Place the fried cod in the pot and gently toss to coat with the sauce for a few minutes.
10. When the sauce thickens, thicken it slightly with cornstarch, add chicken powder to taste, then remove from heat.
This dish of garlic butter codfish is different from my usual fermented chili braised or pan-fried codfish. With the addition of garlic and oyster sauce, the aroma is very strong, and the whole family likes it a lot. It's also simple to make, so you can try it out.
8 Put the diced Sichuan pepper in a wok and stir-fry until fragrant, then add an appropriate amount of oyster sauce, soy sauce, a little sugar, and half a bowl of water.
9 Add the fried basa fish into the pot, gently stir-fry, and simmer for a few minutes.
10 When the sauce thickens, use a small amount of cornstarch to thicken it, add chicken powder to season, then remove from heat.
This preparation of basa fish is different from my usual pickled pepper braised or dry-fried dishes; it uses oil and oyster sauce, resulting in a strong aroma of green onions that everyone in the family likes. It's also simple to make, so you can give it a try.
