Oil-free steamed tapioca jelly and pork belly dish preparation method
1 First, check the ingredients: a piece of five-spice pork, a large block of tapioca jelly.

2 Use skin-on five-spice pork, wash it, then fry it without pre-boiling. Fry with the skin down to remove oil, maintaining low heat for an hour.

3 To prevent burning the skin, place a small spoon under the skin while frying.

4 Remove the meat pieces and let them cool naturally, then cut into slices, placing skin side down in a bowl. Arrange scallions, ginger, Szechuan peppercorns around the edges of the meat slices;star anise;cinnamon placed in a spice bag.

5 Place the large block of tapioca jelly on top of the meat slices.

6 In another pot, heat oil to sauté scallions and ginger;star anise;bay leaves, add boiling water, rice wine;soysauce;sugar;salt, bring to a boil then simmer for a moment before turning off the heat.

7 Pour the cooked sauce over the dish and steam in a steamer on high flame for an hour.
