Summer is the season for abalones.Abalone production peaks in summer. At this time, abalones are particularly plump and delicious.
The flesh of abalone not only tastes fresh but also has abundant nutrition. Traditional Chinese medicine considers abalone meat to be sweet and slightly salty with a cold nature; it can clear heat, detoxify, replenish yin, relieve irritability, benefit the kidneys, promote urination, clear the stomach, treat dysentery, and restore postpartum debility.
When I was shopping at the supermarket, I noticed how fresh the abalones were, so I bought some to try.I made a simple stir-fried abalone with ginger and vinegar.The fresh abalone meat has a rich flavor and a thick texture. Dipping it in ginger and vinegar sauce makes it even more delicious!

Ingredients: Abalones
Seasonings: scallion, ginger, garlic, rice wine, aged vinegar, sugar,soy sauce

How to make Simple Stir-Fried Abalone
1. Clean the abalones thoroughly;
2. Slice the ginger and garlic; chop the white part of the scallion into small pieces, and finely cut the green part;
3. Heat a pot with water, add a little rice wine, ginger slices, garlic slices, and white scallion sections, and bring to a boil over high heat;

4. Add the washed and dried abalones, and blanch for about 1 minute until they open; turn off the heat immediately;
5. Remove the opened abalones with tongs, place them in a dish, sprinkle with scallion pieces, and serve with ginger vinegar sauce.

Tips for Simple Stir-Fried Abalone:
1. Abalones grow on mud flats; to ensure they are delicious, it's crucial to thoroughly remove any sand from their bodies by keeping them in salt water for 2-3 hours before cooking. Mine were already clean, so I just rinsed the surface dirt off. Honest confession: I'm not an expert, and I asked someone about how to check if they are clean;
2. Do not overcook the abalones; fresh ones will open up quickly when heated. If after 1 minute of boiling, the abalone has not opened, it is probably not fresh and may still contain sand.
3. For my ginger vinegar sauce, I added some sugar and a touch of thin soy sauce to rice wine and chopped ginger. This dipping sauce goes well with seafood; you can adjust according to your taste preferences.
