How to Make Homemade Black Soybean Tofu

Start making yourself Tofu from scratch. Now that I know how to make tofu, the family has been eating it homemade, so I'm making some today using black beans.Soak 500 grams of black beans overnight. Use 2500 milliliters of water for soaking.
After soaking, add six times the amount of water (3000 milliliters) to the black beans.
Mash the soaked and drained black beans with a blender. Strain out all the bean residue.
Pour the well-blended and strained liquid back into the pot.
Keep it on low heat and slowly simmer.Simmer until the liquid is fully cooked. Add 50 grams of vinegar to 300 milliliters of water. Gradually add this mixture to the heated bean juice.
Stir continuously until curds form.
The tofu curds should separate from the whey.

Cover and let it sit for an hour, or half an hour if it's hot.

Prepare a mold to pour the tofu into.

Pour the pressed tofu.

5.Cover with the mold. Press down with something heavy overnight.

Cut into pieces once ready.Cooking tip

Due to the hot weather, you should boil the bean juice before adding the vinegar and pressing.

Then simmer on low heat.

3|Rice vinegar

10.50 grams Boil the soy milk until it thickens.

Add 300 grams of water.

Stir continuously until tofu curds form.Tofu skin forms on the surface.

11|Add vinegar solution.

12|Continuously stir to form tofu pudding.

The tofu pudding and liquid separate.

Cover and let sit for an hour, or half an hour in hot weather.

Prepare the mold.

Use the pressed tofu.

Pour into the prepared mold.

Cover tightly.

Place a heavy object on it to press overnight.

The pressed tofu is ready after pressing.

Cut into portions and serve.





Cooking tip
Due to the hot weather, boil the soy milk before adding vinegar and letting it sit for half an hour before pressing.
