How to make West Celery and Mushrooms:

1. Separate the golden mushrooms into small branches and wash.

2. Drain the water.

3. Remove the leaves from the west celery, wash it, cut it into segments, blanch in boiling salted oil.

4. Drain into cold water for use later.

5. Sauté with a little oil and garlic slices.

6. Add the blanched celery segments.

7. Add the mushrooms.

8. Stir-fry until they release their juice, then add oyster sauce.

9. Mix well and serve, garnish with chili pepper flakes.
Tips:
If you can tolerate the taste of west celery, you can skip blanching and stir-fry it raw. Using oyster sauce enhances flavor and helps in thickening the sauce; we recommend using it.
