1. Marinate the lamb chops in olive oil and dried rosemary the night before.
2. Wash the lamb chops and pat them dry with kitchen paper, then coat both sides with the rosemary-infused olive oil mixture.3. Cover with cling film and refrigerate overnight; do not add salt yet to avoid premature loss of moisture in the meat. 4. Remove the lamb chops from the refrigerator 30 minutes before cooking. Heat a non-stick pan with 1 tablespoon of olive oil, then place the lamb chops in the pan and cook over medium heat.

5. Season one side of the lamb chops when they turn golden brown, flip them over, and repeat until both sides are golden.
6. Season again if needed before turning off the heat; add a pinch of black pepper to taste.
7. Place the lamb chops on a plate with some salad greens as accompaniment.
