Homemade Steamed Chicken Wings with Rice Powder

On weekends, after over ten days of cloudy skies, the clear blue sky finally returned to our view. Following this came the high temperatures characteristic of summer. By Sunday, indoor temperatures had reached a new peak of 31 degrees Celsius. In such weather, cooking became less than pleasant; standing near a steaming stove made everyone sweat profusely. On days like these,steaming is an excellent choice. With properly cut ingredients and seasoned with the right spices, placing them in a steamer once it's full of steam allows one to relax in the living room until mealtime.This time, I made braised chicken wings. I ground my own rice flour without any additives; this method reduces oil intake and preserves food nutrients, making it a year-round cooking technique.

Ingredients: 6 chicken wing halves,pumpkin as needed, one bunch of spring onion, ginger as needed, a handful of rice, half an eight-angle seed, a few grains of Sichuan pepper, a small piece of cinnamon bark, and a tablespoon of fermented black beans, soy sauce, light soy sauce, salt as needed.How to make steamed chicken wings 1. Cut the chicken wing halves in half from the middle.(This allows for better seasoning penetration and shorter cooking time.) 2. Boil water in a pot; add the chicken wings, bring to a boil, then remove and rinse with warm water before setting aside.3. Chop the spring onion and ginger into segments and mix them with the chicken wings. Marinate for more than an hour using fermented black beans, soy sauce, light soy sauce, and salt. 4. In a pan, lightly roast the rice along with the eight-angle seed, Sichuan pepper, and cinnamon bark over low heat until the rice turns golden yellow.5. Transfer the roasted rice and spices to a food processor. 6. Use the processor to grind the rice into flour (some small granules can be retained).7. Coat the marinated chicken wings with the rice flour mixture. 8. Cut the pumpkin into thick slices, placing them at the bottom of a bowl.9. Arrange the coated chicken wings on top of the pumpkin. 10. Steam in a pot full of boiling water for 20 minutes; adjust according to wing size.
