Kuài qī fèi piàn | Food Channel's cooking steps First, clean the cow stomach, beef bones, beef, cow tongue, and cow heart by boiling them in cold water until they come to a boil, then remove them and wash off any foam with clean water. Next, prepare the braising liquid, this dish uses white braising, mainly using Sichuan pepper, fennel seeds, safran fruit, star anise, cinnamon, and bay leaves.

Place them in a spice bag.In the braising pot, bring water to a boil, then add the spice bag, ginger, beef bones, salt, and cooking wine. Boil for half an hour to let the flavors develop before adding the cow stomach, beef, cow tongue, cow heart, and cow skin. When the soup boils, switch to low heat,

and occasionally stir with a spoon to prevent sticking on the bottom of the pot. Generally, we buy pre-cooked cow skins. After braising for about 20 minutes, remove them; continue braising other ingredients for another hour before taking them out and cooling them down.

While waiting for them to cool, prepare the Sichuan pepper seasoning: mix salt, sugar, Sichuan pepper powder, soy sauce, and chili oil in a bowl. Then, once cooled, slice each ingredient thinly. Place them in a mixing bowl, add coriander stems, then pour in the Sichuan pepper seasoning, and mix well.

Finally, drizzle with more chili oil,

and sprinkle some roasted sesame seeds and crushed peanuts. Add a few coriander leaves as garnish.
