Home-style Purple Sweet Potato Worm Bread Recipe


I particularly enjoy making bread., with a little one at home, I always hope to surprise her and ensure she grows healthy!
On weekends, my hands always itch, so I must make some bread that the little one loves. One day, taking my daughter out for package pickup, we smelled the scent of the bakery's bread, and my daughter said she wanted to eat bread. I decided not to buy it and told her I would make it.
This time, I tried a different shape; although still worms, they vary in size and appearance. My daughter breakfast holding a worm, pondering which part to eat first. Giving each of us one worm was so quick to finish. I felt this batch of worms turned out pretty well.
Ingredients Main ingredients: 200 grams high flour, 50 grams low flour,milk powder 10 grams, granulated sugar 40 grams, salt 2 grams, yeast 3 grams,milk 98 grams,egg 1 piece, oil 30 grams,purple sweet potato mash as needed
Steps

1. Put all the ingredients into a large mixing bowl.

2. Knead into a smooth dough

3. Roll out on a work surface until it forms a transparent membrane,

4. After kneading, refrigerate for 12 hours (cover)

5. Weigh and divide the dough into six equal pieces, round them. I plan to make six worms, two per person. Haha.(Two haven't been rolled yet, but I took a photo first)

6. Take one of the dough balls, flatten it into an oval shape and spread homemade purple sweet potato mash on top, leaving a side unadorned, with some space around it

7. Roll up to half its length, then cut evenly without fully separating the ends.

8. Wrap each strip tightly around the dough ball (wrap once to prevent unraveling during rising)

9. Place on a baking tray, cover and let rise in a warm place.

10. After rising, brush with beaten egg wash, bake at top heat 175°C and bottom heat 160°C for about 12 minutes.
Tips
1. Placing the dough in the refrigerator before baking improves its texture. It can be made without refrigeration if you're short on time; it might be a bit drier though.
2. Weighing each piece evenly results in better-looking and more uniformly colored bread.
3. When adding ingredients, reserve the egg yolk liquid from one egg for about 5 grams, then mix with milk before brushing onto the dough balls to achieve a more appealing color during baking.Adjust the oven temperature according to the condition of the bread; increase if it's not browning sufficiently or decrease if it starts to burn. Dilute 5 grams of liquid yeast with milk, then brush the surface of the unbaked loaf before baking to achieve a more appealing color.
Set the baking time at the beginning and adjust the last 10 minutes based on the dough's condition. If the surface is not colored enough, increase the temperature; if it starts to turn too brown, reduce the heat or stop baking.
