Homemade Mini Cupcake Sponge Cake Method


Not long ago, I collected some small paper cups. Separate the three eggs into whites and yolks.Add lemon juice to the egg whites. After whipping them until foamy, add sugar in three stages with a mixer set at level 3 or 4 to whip the egg whites stiff. Pour the well-beaten yolk mixture and continue mixing.
Add all the milk and mix thoroughly.

Then, add all the honey and mix thoroughly.

Gently sift in the low flour in two stages.Each time, use a spatula to gently fold until the batter is very sticky, forming a thick paste that does not run easily when lifted. Whipped egg whites should be stiff enough to hold a standing-up toothpick after whipping.

Take one-third of the whipped egg whites and mix them with the yolk mixture using a spatula, folding gently until thoroughly combined.

Finally, fold in the remaining whipped egg whites from below, folding gently but efficiently.

Preheat the oven to 170 degrees.

Place the small paper cups in the baking tray and fill them with the well-mixed batter using a piping bag.

Insert the filled baking tray into the preheated oven on the middle or lower rack, set at 170 degrees for 30 minutes.

After 30 minutes, carefully remove from the oven. It's okay to not invert them.The next morning, they were still firm without any collapse. Final images

Place the baking tray in the middle to lower part of the preheated oven and set it at 170 degrees for 30 minutes.
