Almost every day, there's a bowl of noodles at home.It's noodles. Because my partner loves them so much. Steps

1. Mix flour with water to form a smooth but firm dough.

2. Divide the dough into small portions and roll them out into long strands, brush with oil, and cover with damp cloth for 2-3 hours.

3. Cut chicken legs into pieces.

4. Prepare seasonings, cut scallions into segments and ginger into slices.

5. Boil the chicken pieces in cold water until they come to a boil, then remove them and drain.

6. Heat the pan with some oil, add the chicken pieces and stir-fry.

7. Fry until the chicken turns golden brown, then add chili peppers, scallions, ginger, Korean pepper, star anise, fennel seeds, and cumin to stir out their fragrance.

8. Add cooking wine, dark soy sauce, light soy sauce, sugar, and stir-fry evenly.

9. Add a spoonful of tomato sauce, then add boiling water, bring to a boil, cover the pot and simmer on low heat for 20 minutes.

10. Cut potatoes into thick slices, add them to the pot along with salt, and continue cooking for another 10 minutes.

11. Add Szechuan peppers, cook for about 3-5 minutes.

12. Cook on high heat to reduce the sauce; as we are making noodles, there will be very little reduction in the sauce.

13. Roll out the dough into longer strands.

14. Pull them to form thin and even long strips.

15. Boil the water, add the noodles, and after boiling, add a few scoops of cold water three times.

16. Serve in a large bowl.

Tips
. The longer the dough is left to rise, the easier it is to pull.When simmering the chicken, add more water. For better noodle soup, keep a good amount of broth. add more hot water when cooking, as having more broth is preferable when eating the noodles.
