Homemade Cinnamon Apple Sponge Cake Recipe

Cinnamon,Apples, candied sugar. The texture formed by the cinnamon syrup was quite appealing. The weather became increasingly gloomy and chilly, making this egg muffin just right.
Raisin sponge cake isn't particularly special, but what matters is that pattern of the cinnamon syrup. Imagining it, I thought a few random strokes with the cinnamon syrup over the batter would yield an attractive design. I didn't expect the cinnamon syrup to be so thick; as soon as it dripped onto the batter, it slid down and sank quickly into it. Quickly, I fumbled trying to spread it out. Not sure if I succeeded completely, but I couldn't linger. Judging by the texture, I put it in a mold for baking.
The pattern on top seemed decent enough, but when sliced open, there were still one or two chunks of syrup that hadn't been spread....


muffin batter:Egg yolks 20 grams,corn oil 20 milliliters, granulated sugar 17 grams, low-flour 40 grams, salt a small scoop/16,egg whites 80 grams, water 25 milliliters
apple pieces: one quarter of an apple, half a tablespoon of brown sugar, a quarter teaspoon of cinnamon powder, 15 milliliters of water
cinnamon syrup: 5 grams of cinnamon powder, 15 grams of brown sugar, 1 tablespoon of water

Wash and cut the apples into small pieces. Cook with water, brown sugar, and cinnamon powder over low heat. Simmer until the apples are soft, then turn off the heat and let it cool down.

The remaining ingredients for the syrup should be added to the pot, cooked on low heat until the sugar dissolves, then cooled before use. Add 5 grams of sugar to the egg yolks and mix well. Add oil and mix thoroughly. Add water and mix well. Mix together salt and flour, then sift into the yolk mixture. Stir until combined.

Add apple pieces and stir well, set aside. Beat the egg whites to form rough foam. Add the remaining sugar in three parts while beating. Beat until it forms soft peaks. Take one-third of the egg whites and mix into the yolk mixture. Pour back into the egg whites and gently fold together. Sprinkle cinnamon syrup on top of the batter.

Draw a few random lines with it. Pour into a six-inch round mold. Smooth the surface by tapping the pan.Bake in the ovenat middle lower rack, 150 degrees Celsius for about 40 minutes. Remove immediately and turn upside down after baking. Let cool before flipping over.

Serve sliced, with a cinnamon apple aroma....
