This five-spice sesame seedspotcake has a crispy exterior and a soft interior, tasting salty and fragrant with lingering aftertaste.
Main ingredients:flour 350 grams, fresh yeast 5 grams, water 190 milliliters, green onion 20 grams
Ingredients: 1 tablespoon vegetable oil, 3/4 teaspoon salt, 2 teaspoons five-spice powder, sugar 2 teaspoons, 1 teaspoon water, 1 tablespoon dry flour, and an appropriate amount of white sesame seeds

Steps:
. Fresh yeast is mixed with water until dissolved and added to the flour in portions to form a snowflake-like dough. The dough is kneaded evenly into a ball, covered and left to rise until its volume doubles, with a honeycomb structure inside.
. Finely chop the green onion.

. After the fermented dough has been kneaded out of air, it is rolled into a 3-millimeter thick rectangular sheet. Spread vegetable oil evenly over the surface.
. Five-spice powder is sprinkled and spread evenly.

. Salt is evenly sprinkled on the dough.
. Then sprinkle 1 tablespoon dry flour and spread it evenly.

. Sprinkle chopped green onion.
. Roll up the dough from bottom to top, sealing any seam with your fingers. Gently roll into a uniform thick strand.

. Cut the rolled dough into 8 equal parts.
. Stack each part vertically and flatten slightly. Roll out into small round buns. Let it rise for 20 minutes. Mix sugar with water until dissolved, brush this sugar water over the surface of the buns, and sprinkle an appropriate amount of white sesame seeds on them.. Place the dough buns in the air fryer basket.. Push the basket into the air fryer.

. Set to 180 degrees Celsius for 25 minutes, then start the air fryer.
. Remove immediately after baking is complete.

. Tips:
. After applying oil, sprinkle dry flour to prevent the oil from flowing out.

. The dough needs a second rise before shaping to ensure softness in the final product.
To prevent the oil from becoming runny, dust the dough sheets with dry flour after applying oil.

Allowing the pancake skin to rest again before cooking ensures a fluffy final product.
