Homemade Egg Sour Hot Noodles Recipe

Ingredients:

For one person

1 egg

Fine noodles 30-50 grams (or a thumb-thick portion)

Green leafy vegetables 150 grams (Chinese flowering kalemibai cai,small oil mustard greensromaine lettuceendivelettuce, Chinese cabbage, etc., I like to eat more vegetables so I will add more) Celery leaves, Chinese cabbage, etc. are all acceptable.

Green onions 2 stalks

  Peanuts A small amount of oil

Soy sauce 5 grams (a tablespoon plus a bit or as you prefer, I usually choose special-grade soy sauce without additives) Fragrant

vinegar 2-3 grams (about one spoonful, I like the flavor of Chen Shun's fragrant vinegar best) Sesame oil

  A small amount Kernels of Sichuan pepper oil

  A small amount Chili oil 1-2 tablespoons

  White sesame paste A little (optional, adding it will give a different taste)Lard(add as you see fit)

Sichuan pepper powder 1 gram (to your liking)

  Chicken essenceMonosodium glutamate A little

Optional, add a small amount for flavor variation

  Pork lard A little (if you can eat it, we usually don't add it in our home now)

Garlic 1 clove (optional if you don't mind the taste)

Steps:

1. Clean and wash the vegetables and green onions, prepare them for use; chop the green onions finely and crush the garlic into paste, adding a little cold water to mix.

2. Wash the eggs, remove the shell, and beat them. Heat a clean pan, pour in a small amount of peanut oil, fry the eggs until they are done, break them up, then take them out.

3. Add an appropriate amount of water to the pot and bring it to a gentle boil for cooking the noodles. When the water starts to bubble but hasn't fully boiled, add the noodles and use chopsticks to separate them, preventing clumping. You can add 1-2 times cold water during the cooking process, about half a bowl at a time.The noodles are almost cooked when you put in the green leafy vegetables; blanch until done.

4. While cooking the noodles, take a seven-inch serving bowl and place all the seasonings and fried eggs in it along with some of the noodle water or boiled water.

5. Pour the cooked noodles into the bowl, sprinkle with chopped green onions, mix evenly and serve immediately.

Characteristics:

Aromatic, sour, and spicy, very satisfying. The soft and chewy noodles paired with crisp vegetables offer an exceptional texture.

Notes:

1. Do not add the noodles to boiling water; this can cause the water to become cloudy and affect the noodle's texture. Always add the noodles when the water is just starting to bubble at the bottom of the pot, preventing the noodles from becoming overcooked or clumped together.

2. You can add 1-2 times cold water during the cooking process to speed up the cooking time. Fine noodles do not require additional water.
