Homemade Mei Cai Meat Pies Recipe

Ingredients
Dough ingredients: ordinary All-purpose flour 300 grams, warm water 150 ml, salt 3 grams
Filling ingredients:Preserved mustard greens 50 grams,Five-spice pork mince 100 grams, two to three small green onions, sugar 5 grams,Sesame seeds A little bit

1. Soak the preserved mustard greens in water beforehand, change the water twice during soaking to avoid too much saltiness.

2. Knead the flour into a smooth dough; it should not be too hard. Let it rest for 30 minutes.

3.Pork mince mixed with a little bit of water, squeeze out excess water from the soaked preserved mustard greens and mix them into the pork mince. Season according to the saltiness of the mustard greens, add cooking wine, salt,soy sauce, sesame oil, and 5 grams of sugar. Finely chop the green onions and mix them in.

4. After resting, divide the dough into about 50 gram portions; this amount makes nine pieces.

5. Press one piece of dough flat and roll it into a circle, wrapping it with meat filling.

6. Then, seal the edges like making dumplings.

7. Place the dumplings with the seam downwards, gently press them down, and use a rolling pin to lightly flatten them. Sprinkle a little sesame seed if desired.

8. Brush a thin layer of oil on the surface. Cook in a non-stick pan over low heat until both sides turn golden brown.
