Yibin hot noodle, characterized by red chili oil, peanuts,crushed meat floss, celery seed,fermented sprouted vegetables for seasoning. Because it can be ignited due to heavy oil and no water, hence the name "burning noodle." Sounds fiery, doesn't it?

1 Wash the fermented sprouted vegetables, drain the water, chop finely, and stir-fry in a hot wok for five minutes. For those who like meat,add diced pork belly and stir-fry together.

2 Toast the peanut seeds until slightly black and fragrant in a dry wok, remove the outer shell, and place them in a bowl to be crushed.

3 Cook the water leaves noodles (use regular alkaline noodles if unavailable), do not overcook, drain thoroughly, then mix with sesame oil to prevent sticking.

4 Pour red chili oil,sesame seed oil with, soy sauce over the noodles, and sprinkle crushed peanuts, fermented sprouted vegetables, and green onions. The burning noodle is complete!
