Mixed whole wheat flour and low gluten flour.

Fresh milk was too cold from the refrigerator, so warm it up with warm water in a bowl.

Added yeast to the warmed milk and stirred until dissolved. Added sugar and stirred until fully mixed. The yeast is 2g as shown in the picture.

Gradually added the yeast-sugar-milk mixture into the flour while stirring with a (chopstick).

Placed the dough in a bowl covered with cling film. Because the temperature is low now, I placed it next to the stove for fermentation.

After about 30-40 minutes, uncovered and poked a hole with my finger, which did not spring back indicated that it had risen properly. Rubbed out the air bubbles in the dough. It should be done after around ten minutes of kneading.

Kneaded to form a flat surface. An rolling pin would help to get an even and smooth thickness.

2. Without molds, you can knead into any shape you like by hand.
3. Yeast must be dissolved in lukewarm milk as it will not activate if too hot or cold.

In colder weather, I placed the dough next to the stove for fermentation; alternatively, you can pre-heat the microwave or oven briefly, turn it off, and place the dough inside for fermentation, ensuring it's not too hot that you can touch with your hand comfortably. Alternatively, you can use warm water for steaming fermentation.
