Duck skin for the peanut sauce:Pork skin 200 grams, red Radicchio half a piece,White radish a small half piece,Cucumber half a piece, a small bowl of rice wine,Ginger 1 piece,Star anise 2 pieces, salt, half a small spoon of sesame oil, peanut sauce, 3 garlic cloves
Steps to make peanut sauce duck skin:
1. Boil the pork skin, rice wine, and ginger slices in boiling water until partially cooked; use a knife to remove the hair.
2. Clean the pork skin after removing the hair, then cut it into strips 4 cm long and 2 cm wide.
3. Fry the cut pork skin over low heat while frequently turning it; fry until golden brown, then soak in cold water for 10 minutes before removing.
4. Add star anise, a tablespoon of salt, and the pork skin to a pot and simmer on medium heat until the skin is tender; remove and take out.
5. Mix the peanut sauce (too thick) with two to three times its volume in cold boiled water, add a little salt, and half a small spoon of sesame oil.
6. Wash the radicchio, white radish,red radish all clean, cut into strips, peel the garlic and crush it into garlic paste with a pestle.
7. Combine the braised sauce from step 4, the diluted peanut sauce, and the garlic paste; stir well. Finally, arrange the sliced vegetables and pork skin on a platter and pour the secret seasoning peanut sauce over them.
