How to make crab and rice vermicelli pot:
1. Clean the crabs thoroughly and cut them into large pieces.



Rice vermicelli should be soaked in warm water around 40 degrees Celsius for 10 minutes, then rinsed with cold water to cool down, cut into segments about 15 cm long, and air-dried for half an hour. The rice vermicelli should feel soft but not mushy after thorough drying.
2. Prepare ginger slices and red shallots; soak the dried shrimp until softened, wash them clean, and drain. Mix soy sauce, dark soy sauce, cooking wine, and black pepper powder in a small bowl, then mix well to prepare for use.



3. Heat some oil in a pot over medium heat, dry-fry the crabs for 2 minutes on one side, turn them over, add ginger slices, red shallots, and dried shrimp, and continue frying for about 2 more minutes; be careful not to burn them. If too dry, you can spray a little cooking wine.
4. Remove the fried crabs and, using the same pot, add some oil if necessary, then stir-fry the rice vermicelli for about two minutes. When the rice vermicelli starts to become translucent, pour half of the prepared sauce over it, stirring continuously until the rice vermicelli is evenly coated with the sauce. Add the crabs back into the pot and pour in the remaining sauce, stir-frying until the sauce has thickened and dried out.
