Ingredients

  High-gluten flour Flour 300g

  Butter 25g

Salt 2g

  Milk 210g

Yeast 5g

  Sugar 30g

Cocoa powder 20g

Egg wash as needed

Steps for making cocoa bread

1. Put all ingredients except butter into the stand mixer bowl

2. Knead with the stand mixer for 10 minutes

3. After 10 minutes, add 25g of butter and continue kneading for 15 minutes

4. Form a dough ball, cover with a damp cloth to rise

5. When a finger poke leaves an indentation that doesn't spring back, the dough is ready

6. Knead out any air bubbles, divide into three portions, and let rest for 5 minutes

7. Roll each portion into a long rectangle

8. Fold the two sides towards the center

9. Roll it back into a long strip

10. Roll up from one end

Tips

If large bubbles appear on the surface, prick them with a needle before baking. Remove from the oven promptly after it has finished baking and demold.
