Pork Bones Stewed with Potatoes

- Steps for Making Potato and Rib Soup

1. Rinse the ribs in clear water, peel the potatoes, and cut them into dice.

2.Use a pot Fill 2/3 of the soup pot with cold water, add the ribs along with the cold water, and start simmering over medium heat. When the water begins to boil, remove the foam and scum from the surface.

3. After cleaning up the foam, add the potatoes, reduce the heat, and simmer for 2 hours.

4. After one and a half hours of simmering, add two tablespoons of salt, and continue simmering until 2 hours have passed. Taste the broth for saltiness before serving. Add some dark soy sauce to a bowl, then ladle out the ribs and potatoes, sprinkle with chopped scallions. It smells so good!
